WORKING TOGETHER

Easter Coming

Tuesday, March 27, 2012

At Easter our mums usually cook a "Grain Pie". It's a typical cake of the South of Italy. It's very tasty but it takes a bit of time to prepare it.
Here is the recipe:
     Ingredients
-box of cooked grain                 -2 vials of orange essence
-300 grams of milk                    -500 grams of ricotta
-1 tablespoon of butter             -300 grams of sugar
-2 envelopes of vanilla              -4 entire eggs plus two yolks
Procedure
Pour the grain in a pot adding the 300g of milk, the skin of an orange and the skin of a lemon and  1 tablespoon of butter. Boil it at a slow flame mixing it until it becomes creamy. Cool it off and then pour it into another bowl, adding 500 grams of ricotta, 300 grams of sugar, 4 eggs + 2 yolks, 2 envelopes of vanilla and 2 vials of orange essence. Finally roughly beat all of it together.
Crust for the grain pie
In bowl lightly work together 250 grams of flour, 100 grams of sugar, 100 grams of melted butter, 2 eggs, 1 grated orange peel, a pinch of salt and 1 envelope of baking powder.
Keep it for about 1/2 an hour  in the refrigerator. Finally butter a baking pan , spread out the mixture all the way to the edges of the pan, leaving on the side some of the mixture for the strips on top. Pour the mixture in the baking pan, cover it with the strips of dough and bake it in a pre-heated oven at 150°for more than an hour. Let it dry out and cool in the open oven.
